The Arabs used to play a similar game called azzhar (meaning dice) which brought over to Europe by the Moors and wes introduced into France and England by travelling merchants around 1500.

The true form of craps as we know it today can be dated back to the Middle Ages where it was called, quite fittingly, Hazard. this game was played extensively in France and england but was almost unknown in other countries. The name "craps" is from french and it means toad. It is anyone's guess what exactly inspired the French to call this game after toads, but then, that is another question.

In the 17 hundreds, the games crossed the Atlantic with the French colonizers to Canada, then called Acadia. When the English conquered Acadia and all the settlers that lived there moved to Louisianna, the named was renamed "crebs" and finally "craps".

Anyway, the two forms of Craps that we play today are "Street Craps" and "Bank Craps". Street Craps is palyed in a very simple manner on the street where a point is chosen and the shooters then attempt to hit that point with a ball or some other object. I can be surmised that hopscotch or marbles is a simplified form of this game.

The more elegant option is "Bank Craps" is the game that is played in the casino. The "bank" part of the name comes from the fact that the players play against the house, which can cover all the players' bets.
